The Thereza Cuvee reflects the highest quality lots from the Thereza vineyard. Each varietal is beautifully expressive while harmonizing rich and complex flavors. This wine is concentrated with aromas of berry, wild cherry, earthiness, spice and a touch of gaminess. The flavors are a dramatic culmination of blueberry, blackberry, mushroom and black pepper.
A long growing season and slow maturation time resulted in complex flavor development and concentration. Coming from the limestone soil structure of the Thereza Vineyard these grapes were meticulously hand harvested between October 10th and November 1st.
Hand selected lot of each varietal were fermented separately in small open top fermenters for 15 days to allow maximum concentration of the fruit's character. The Syrah was aged in 45% new French oak, the Mourvedre was aged in 20% new French oak and the Grenache and Counoise were aged in slightly older French oak barrels to retain more of the natural fruitiness. Each varietal was barreled down separately for 10 months before master blending.
